HOW TO MAKE EASY HOMEMADE TORTILLAS
Once you make these tortillas and get the hang of the rolling pin, you’ll find yourself foregoing the store bought tortillas. With no yeast, there is no rise time. Rather a short rest for the gluten to settle so you can roll them out without shrinkage.
If you do experience shrinkage when rolling out the tortillas, they simply need to rest longer.
Ingredients needed:
- All Purpose Flour
- Baking Powder
- Salt
- Butter
- Hot Water
Directions:
Gather up the dry ingredients and whisk together. Add softened butter and hot water. Mix it together until a shaggy dough appears. There might be little bits left in the bowl.
Dump it out on to the counter. Knead together with your hands for a few minutes until it becomes smooth. Cover with a damp towel and rest for 10 minutes. Its okay for it to rest longer if needed.

Divide out the dough into 12 equal(ish) portions. I eyeball it. Shape each piece into a small ball. I stretch it out and pinch all the creases together, then roll it around on the counter with my fingertips. Cover again and let them rest for another 10 minutes.

Generously flour your work surface. I also add some flour to the top and bottom of my tortilla to assist with the rolling. Using a rolling pin, roll each ball into a 10-12 inch circle. If they shrink easily, they need more rest time.

Heat a cast iron pan to medium high heat. Once hot, spray a very small amount of oil. It may take a tortilla or two to get the heat right. Let the tortilla cook for 30-60 seconds. It will bubble up. Check every 15 seconds or so in the beginning to adjust the heat. If it burns in the first 30 seconds, your skillet is too hot. Flip and cook another 30 seconds.

Remove tortillas and place them in a ziplock bag that remains unzipped. I place a paper towel in the bag to absorb some of the moisture and steam. This keeps the tortillas soft until you’re ready to eat.
