If you need a dinner that takes almost no effort, this one belongs in your regular rotation.

This Crockpot Sausage, Peppers & Potatoes is a true dump-and-go meal. Toss everything into the slow cooker in the morning, let it cook all day, and dinner is ready when you are.

The sausage adds tons of flavor while the potatoes, peppers, onions and green beans cook until tender in a seasoned broth. Serve it over rice for a heartier meal, or eat it straight from a bowl with plenty of that flavorful broth. Some crusty bread is always a great addition here.

It’s simple, cozy and exactly the kind of meal I want on a busy night.

Why You’ll Love Crockpot Sausage, Peppers & Potatoes

  • Dump-and-go: No browning, no babysitting. Just load the crockpot and walk away.
  • Slow cooker friendly: Let the crockpot do the work while you get on with your day.
  • Family-friendly: Mild enough for kids, but easy to spice up for adults.
  • Budget-friendly: The green beans and potatoes stretch the meal without making it feel skimpy.
  • Great leftovers: The flavor gets even better the next day.
  • Freezer-friendly: Make a batch now and save some for another busy night.

Tips for the Best Crockpot Sausage, Peppers & Potatoes

  • Use smoked sausage or Andouille for the easiest version. It’s already cooked, so it just soaks up flavor. If you use raw Italian sausage, brown it first or make sure it cooks through to 160°F.
  • Cut the potatoes evenly. Pieces about 1 inch big cook at the same rate and hold their shape. Yukon Golds or red potatoes stay creamier than russets.
  • Put the potatoes on the bottom. They take the longest to cook, so they need to sit closest to the heat, in the broth.
  • Don’t lift the lid. Every peek adds cooking time.
  • Finish with something fresh. A sprinkle of parsley or a squeeze of lemon at the end brightens the whole pot.

Ways to Change It Up

Make It Spicier: Add green chiles, diced jalapeños, red pepper flakes, cayenne or your favorite hot sauce. Hot Italian sausage works too.

Add More Vegetables: Zucchini, spinach, corn or mushrooms are all easy additions. Stir spinach in during the last 15 minutes so it doesn’t get mushy.

Use Chicken Instead: Boneless, skinless chicken thighs stay tender in the slow cooker and are a great swap for the sausage. For a shortcut, add shredded rotisserie chicken during the last hour.

What to Serve With Crockpot Sausage, Peppers & Potatoes

  • Crusty bread or rolls to soak up the broth. My Easy No Knead Dutch Oven Bread is perfect here.
  • Rice or egg noodles for a heartier meal.
  • A simple green salad with a tangy vinaigrette.
  • Cornbread or warm biscuits.
  • Roasted broccoli or a crisp slaw for something fresh on the side.

How to Store Leftovers

Let the leftovers cool slightly, then move them to an airtight container. Store in the refrigerator for 3–4 days.

Reheat single portions in the microwave, or warm gently on the stovetop. Add a splash of chicken broth if it has thickened in the fridge.

Freezing Crockpot Sausage, Peppers & Potatoes

Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator, then reheat on the stovetop or in the microwave. If it’s thicker than you like, thin it with a little water or chicken broth.

Tip: Potatoes can turn a little soft or grainy after freezing. If you plan to freeze a batch, cut them a little larger or slightly undercook them.

Frequently Asked Questions

Do I need to brown the sausage first? Not if you use smoked sausage or Andouille. It’s already cooked. Browning adds a little extra flavor if you have time.

Can I cook it on high? Yes. Cook on high for about 3–4 hours or on low for 6–8 hours, until the potatoes are fork-tender.

Can I use frozen vegetables? Yes. Frozen peppers, onions and green beans work great. You don’t need to thaw them first.
