High Protein Taco Skillet

The perfect comfort food high protein skillet thats packed with taco flavors, vegetables and homemade cheese sauce.

Ingredients
  

  • 1.5 pounds ground beef (90/10)
  • 1 green pepper diced
  • 1 red pepper diced
  • 1/2 jalapeno finely chopped
  • 1/2 large onion diced
  • 2 cloves garlic minced
  • 1/8 cup taco seasoning
  • 16 oz cottage cheese
  • 3/4 cup salsa
  • 2 tablespoons taco sauce or hot sauce
  • splash of milk
  • 1 cup shredded sharp cheddar cheese
  • 1 pound pasta cooked al dente
  • 1 bunch cilantro chopped
  • Juice of 1 lime

Instructions
 

  • Using an immersion blender, puree the cottage cheese.
  • Then add salsa, hot sauce, splash of milk and cheese.
  • Stir until well combined.
  • Set aside
  • Cook pasta until al dente, drain and set aside.
  • Meanwhile, in large skillet on medium heat, add a few tablespoons of olive oil.
  • Saute peppers, onions and jalapeno for 3-5 minutes.
  • Add ground beef and cook until no longer pink.
  • Add garlic and cook until fragrant, about one minute.
  • Sprinkle taco seasoning, stir until mixture is well coated.
  • Pour in cheese sauce and stir until melted, about 1 minute.
  • Stir in pasta.
  • Add juice of a lime and bunch of cilantro. Mix well.
  • Enjoy immediately.
