A classic and simple old-fashioned peanut butter candy covered in a chocolate shell. It also includes Grandma’s secret ingredient!

A great recipe to make with your kids or grandkids this holiday season as it involves lots of hand mixing, dunking and chocolate licking.

Ingredients

The secret buckeye ingredient?
Rice Crispy cereal
. It gives the buckeyes a little something extra for texture. You could easily leave this out if desired.

The old fashioned recipe called for paraffin wax, which I replaced with coconut oil. It does make me wonder…does anyone use paraffin anymore?

Peanut Butter is the star of the show here. You can use creamy or crunchy, whatever your heart desires.

Buckeyes

A classic and simple old-fashioned peanut butter candy covered in a chocolate shell.
Prep Time 20 minutes
Total Time 20 minutes

Ingredients
  

  • 1/2 cup butter softened
  • 3.5 cups powdered sugar
  • 2 cups peanut butter
  • 3 cups rice crispies
  • 12 ounces chocolate chips
  • 1 tablespoon coconut oil

Instructions
 

  • In a large bowl, mix together butter, peanut butter, powdered sugar and rice crispies.
  • Form into balls and insert a toothpick.
  • Freeze until solid, 1-2 hours.
  • In a tall microwave safe measuring cup, add chocolate and coconut oil. Microwave in 30 second increments until melted. Stir well every 30 seconds.
  • Dip frozen buckeyes into chocolate, holding on to the toothpick. Tap off excess chocolate and place on parchment paper. Freeze again. (may remove toothpicks)
  • Store in fridge or freezer in an airtight container.
