Pork Szechuan Noodles
Ingredients
- 12 oz linguine noodles
- 1 cup chicken broth
- 2 tablespoons soy sauce
- 1 pound ground pork
- pinch red pepper flakes
- 6 green onions
- 1 large carrot shredded
- 1 tablespoon minced garlic
- 1 tablespoon raw ginger minced
- 3 tablespoons peanut butter
- 1 lime zested and juiced
- reserved pasta water if needed
Instructions
- Cook pork until no longer pink.
- Add red pepper flakes, green onions, carrot, garlic and ginger. Cook for 3 minutes.
- Add peanut butter, broth and soy sauce. Stir until melted and well combined.
- Add cooked linguine noodles.
- If too dry, add some reserved pasta water.
- Stir in the juice of a lime before serving.
- Garnish with cilantro, additional green onions and lime.
