BONUS: Leftovers keep amazingly well for those that are meal prepping.
If you don’t have coconut aminos, soy sauce will do just fine.

Pork Egg Roll in a Bowl
An easy 30 minute meal that’s high in protein and low in carbs and fats. It’s gluten free, dairy free and soy free.
Ingredients
- 1 pound ground pork
- 3 T sesame oil divided if needed
- 2 cloves garlic minced
- 1/2 yellow onion diced
- 2 teaspoons ginger
- 3 cups green cabbage chopped
- 2 cups red cabbage chopped
- 1/2 cup carrots shredded
- 3 eggs
- 3/4 cup coconut aminos sub soy sauce
- 3 tablespoons chili sauce
- 2 tablespoons rice vinegar
- 1 bunch cilantro chopped fine
Instructions
- In a large skillet, cook ground pork and set aside.
- In same skillet, heat sesame oil on medium heat. Add carrots and onion. Cook until translucent.
- Add garlic, cook another minute.
- Meanwhile make the sauce. Whisk together coconut aminos, rice vinegar and chili sauce. Set aside.
- Add cabbage to onions and carrots. Lower heat to medium low. Add more sesame oil if needed. Cook for 5 -7 minutes. Make a hole in the center. Add eggs. Scramble in with the cabbage.
- Add cooked pork.
- Mix together and add the sauce.
- Simmer on low for 5 minutes.
- Add cilantro just before serving.
- Serve immediately and enjoy!
