When you need dinner to practically make itself, this Crockpot White Chicken Chili is the recipe to make. It’s creamy, hearty, packed with tender chicken and white beans, and has just the right amount of cozy chili flavor.

Why You’ll Love Crockpot Creamy White Chicken Chili

  • Dump-and-go: No need to cook the chicken first. If you’re looking for a shortcut, use rotisserie chicken.
  • Slow cooker friendly: Let the crockpot do the work.
  • Family-friendly: Mild enough for kids, but easy to spice up for adults.
  • Budget-friendly: The beans and potatoes stretch the meal without making it feel skimpy.
  • Great leftovers: The flavor gets even better the next day.
  • Freezer-friendly: Make a batch now and save some for another busy night.

Crockpot Creamy White Chicken Chili Alternatives

Make It Spicier

Add extra green chiles, diced jalapeños, cayenne pepper, or your favorite hot sauce.

Make It Less Spicy

Use mild green chiles and skip the jalapeños. The creamy base keeps this chili very mild and kid-friendly.

Use Rotisserie Chicken

Already have cooked chicken? Make this even easier by using shredded rotisserie chicken. Add it during the last 30–60 minutes of cooking instead of cooking raw chicken in the crockpot.

Add More Vegetables

Diced bell peppers, zucchini, spinach, or extra corn are all easy additions.

Use Chicken Thighs

Boneless, skinless chicken thighs work beautifully in the slow cooker and stay especially tender.

What to Serve With Creamy White Chicken Chili

This chili is filling enough to be a meal on its own, but I love serving it with something crunchy or bready.

Try it with:

And don’t forget the toppings!

  • Cilantro
  • Avocado slices
  • Shredded Cheddar or Mexican Cheese
  • Crushed tortilla chips
  • Extra lime
  • Sour Cream
  • Jalapeños
  • Whatever you desire

How to Store Leftovers

Allow the chili to cool slightly before transferring it to an airtight container.

Store in the refrigerator for 3–4 days.

Reheat individual portions in the microwave or warm the chili gently on the stovetop. Add a splash of chicken broth if it has thickened too much in the refrigerator.

Freezing Crockpot Creamy White Chicken Chili

This is a great soup to freeze. Place Crockpot White Chicken Chili in a freezer safe container for up to 3 months. Unthaw and reheat. If soup seems thicker than preferred, you can thin out with water or chicken broth.
