Homemade Pigs in a Blanket

A homemade version of the classic 'pigs in a blanket'. An easy, quick and kid friendly lunch with homemade crescent roll dough.

Ingredients

  • 2.5 cups of flour plus more if needed
  • 2 1/4 teaspoons instant yeast
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 cup warm water
  • 2 tablespoons avocado oil can substitute for olive oil
  • Mini sausages or smokies
  • Sharp cheddar cheese cut into thin slices
  • 1/2 stick melted butter
  • Sea Salt

Instructions

  • In a stand mixer, whisk together flour, instant yeast, sugar and salt. Add warm water and oil. Using a dough hook, mix on low for 5-7 minutes. If dough is continuing to stick to sides of the bowl, add a tablespoon of flour at a time. It will stick to the bottom of the bowl but not to the sides.
  • Cover and let rise for 45 minutes or until doubled in size.
  • Preheat oven to 400 degrees.
  • Lightly flour a work surface. Roll dough out to 12” x 20” rectangle (or close to it).
  • Starting on the long edge, cut 4 equal sections. Then cut each of those 4 sections into small triangles, anywhere from 9-11 per section. (This also depends on the preferred dough to sausage ratio. If you want less dough per ‘blanket’, cut more triangles per section).
  • Place sausage and piece of cheese at the bottom of the triangle and roll up. Place on a parchment lined cookie sheet seam side down.
  • Melt butter. Brush the pigs in a blanket before baking. Sprinkle with sea salt.
  • Cook for 15-20 minutes or until golden brown. Rotate pans halfway through and tent with foil if necessary.
