An oldie but a goodie. I grew up on this cheeseburger chowder; a delicious, versatile, and easy weeknight soup that keeps you coming back for more. There’s just something special about foods reminding you of your childhood.

You could easily mix and match different variations of cheeseburger chowder.

Here are a few ingredient substitution ideas:

Meat
– Swap out the ground beef for chicken, turkey, spicy sausage or simply all bacon.

Vegetables
– I left out the celery, but you could easily add this in with peppers, tomatoes or mushrooms. Hashbrowns could be replaced with diced potatoes.

Cheese
– a great way to use up what you have in the fridge. I grew up with Velveeta in my moms Cheeseburger Chowder. Add pepperjack for some kick.

Milk
– You could use coconut milk, half and half, or unsweetened almond milk.

Broth
– Vegetable, beef, or chicken broth would be acceptable.

FREEZING MAMA B’S CHEESEBURGER CHOWDER

This is a great soup to freeze. Place Mama B’s Cheeseburger Chowder in a freezer safe container for up to 3 months. Unthaw and reheat. If soup seems thicker than preferred, you can thin out with water or chicken broth.

Mama B's Cheeseburger Chowder

A delicious, versatile, and easy weeknight soup that keeps you coming back for more.

Ingredients
  

  • Olive Oil
  • 1/2 medium onion chopped
  • 3 carrots shredded
  • 1/2 - 3/4 cup cooked bacon chopped
  • 1 lb ground beef
  • 4 cups hash browns
  • 2 cups corn
  • 2.5 cups chicken broth
  • 3 Tablespoons butter
  • 3 Tablespoons flour
  • 4 cups whole Milk
  • 8 oz shredded cheddar cheese
  • 4 oz cream cheese or sour cream slightly warmed
  • Salt and pepper
  • 2 Tablespoons Italian seasoning

Instructions
 

  • In a large pot, heat oil and add beef, onions and carrots. Season with salt, pepper and Italian seasoning.
  • Cook until onions are translucent and beef is browned. Remove grease if needed.
  • Add cooked bacon, corn, hash browns and chicken broth. Cook for 10-12 minutes over medium heat or until potatoes are heated through. (If the potatoes soak up all the liquid, add another cup)
  • Add milk.
  • While milk warms, heat up a small skillet. Melt the butter and add flour. Whisk together briskly until browned, 1-2 minutes. Remove from heat.
  • Add to the soup, allowing it to thicken for a minute or two.
  • Add cream cheese and cheddar cheese. Stir until heated through. Do not boil.
  • Serve with extra cheese and fresh sourdough.
