Ingredients
Sandwich Bun
1TablespoonButter
Ring of Pella Bologna5-7 slices
2slicesPepper Jack Cheese
1TablespoonMustard
1Egg
Kettle Chips
Instructions
Butter sandwich bun and toast until golden brown.
Heat up a cast iron pan to medium-low heat.
Slice bologna 1/4” thick (5-7 pieces)
Lay out your bologna individually and fry for about 3-5 minutes on each side, or until they've browned.
Place bologna on bottom of bun. Immediately add the pepper jack cheese on top. Adding the cheese while the bologna is still hot allows time to melt while you prepare the rest of the sandwich.
With an already hot cast iron pan, crack and fry one egg. Season with salt and pepper. Once the first side has browned, flip the egg and add a piece of pepper jack cheese. Allow the cheese time to melt while the other side of the egg fries.
Once the egg is done, stack it on top of the fried bologna and melted cheese.
Lather a generous amount of mustard on top side of bun.
Add the kettle chips to the sandwich for some added crunch.
