Ingredients
1tablespoonolive oil
1.5poundsground turkey
1medium oniondiced
3clovesgarlicminced
1large sweet potatodiced small
1red pepperdiced
1can black beansrinsed and drained
1can diced tomatoeswith juices
2cupsbroth
1/4cuptomato paste
2-3tablespoonschili seasoningdepending on spice level desired
1teaspoonsalt & peppermore to taste
Instructions
Heat olive oil in a large pot over medium heat. Add onion and bell pepper, cooking until softened (about 5 minutes). Stir in garlic. Cook for another minute.
Add the ground turkey, breaking it up with a spoon. Cook until no longer pink. Strain grease as desired. Season with salt and pepper.
Add tomato paste and chili seasoning. Stir until all is coated.
Stir in sweet potatoes, tomatoes, broth and black beans.
Bring to a gentle boil, then reduce heat. Cover and simmer for 25–30 minutes, or until the sweet potatoes are tender and the chili has thickened.
Adjust seasoning, then ladle into bowls and pile on your favorite toppings: sour cream/ yogurt, jalapeños, cilantro, cheese, green onion, etc.
