Donut Ice Cream Sandwiches with Homemade Magic Shell Topping
Homemade ice cream sandwiched between a cake donut, covered in chocolate and sprinkles.

Ingredients
1teaspoonvanilla extract
1/4teaspoonof espresso powder
Pinchof salt
1/2cupsemi-sweet chocolate chips
1/3cupcoconut oil
1teaspoonunsweetened cocoa powder
6cake donuts of choice

Instructions
Allow ice cream to set out for 15 minutes or so to get soft.
Cut cake donuts in half.
Scoop a generous 1/4 cup of ice cream on donut bottom halves.
Gently spread out the ice cream and top with remaining donut half.
Freeze sandwiches for at least an hour.
In the meantime, make the Homemade Magic Shell Topping
In a small bowl, stir vanilla, espresso powder and salt together until powder dissolves.
In a microwaveable bowl, add chocolate chips and coconut oil. Microwave in 15 second intervals, stirring each time. The chocolate doesn’t have to be melted all the way. Once chocolate chips are half melted, whisk thoroughly and the rest will melt.
Add the vanilla espresso mixture along with cocoa powder to the melted chocolate and whisk well.
Let cool to room temperature before using.
Remove donut ice cream sandwiches from freezer. Lay on a wire rack over a cookie sheet. Pour magic shell over each donut. Sprinkle with desired toppings.
Enjoy immediately or store in freezer until ready to eat.
