A DIY version of Costco's ready made meal, Meatloaf and Mashed Potatoes. Double the food for less money.

Ingredients
2lbsbeef or beef/pork mix
1/2onionpulsed in food processor
2clovesgarlicpulsed with onion
1/2cupoatmealpulsed in food processor
1/2cupmilk
1egg
2tablespoonWorcestershire sauce
1 1/2teaspoonsparsley
1teaspoonsalt
1teaspoonpepper
1teaspoonground mustard
1teaspoongarlic powder
1teaspoononion powder
1/2cupketchup
1/4cupbbq sauce
2Tablespoonsbrown sugar
1teaspoonvinegar
2poundsmashed potatoes
1stick buttersoftened
milkenough for consistency you prefer
1/2cupsour cream or a Boursin cheese
saltpepper and garlic salt, to taste
Instructions
Preheat oven to 375 degrees.
Prepare a 9x13 baking dish. I used tin foil to create a wall in the middle, maybe 3" high so food doesn't spill into each other. Spray with nonstick spray.
To a large pot add water and potatoes. Boil until fork tender.
Drain potatoes, add back to large pot.
Add butter, sour cream, milk and seasonings. Use a hand mixer and mix until creamy.
In a food processor add oatmeal, onion and garlic. Pulse until fine and looks like a rough paste.
Add all meatloaf ingredients into a large bowl. Mix by hand or with hand mixer.
Place mashed potatoes in half the baking dish, meatloaf in the other half.
Mix up glaze.
Add glaze to top of meatloaf and spread in a thin layer. Add a few dollops of butter on top of the potatoes.
Bake until meat reaches at least 165 degrees internally and glaze has caramelized.
