Cheese and Herb Irish Soda Bread
An easy homemade bread that requires no yeast and is ready in under an hour.

all-purpose flour
more for dusting

teaspoon
baking powder
1/2
teaspoon
baking soda
1/2
teaspoon
salt
2
tablespoons
dried herbs
1
cup
grated sharp cheddar cheese
1
cup
buttermilk*
1
egg
2
tablespoons
melted butter
Instructions
Preheat oven to 425 degrees.
Line a cookie sheet with parchment paper.
Whisk flour, baking soda, baking powder and salt together in a medium sized bowl. Add cheese and herbs. Mix until well distributed.
Combine egg and buttermilk. Whisk with a fork.
Make a well in the center of dry ingredients. Pour in wet ingredients. Stir just until flour is incorporated. Be careful not to overwork the dough.
Add a tablespoon of flour if needed. The dough will be sticky, however you should be able to work it into a mass.
Place dough onto a floured surface. Dust dough with additional flour and work gently and quickly into a round loaf.
Transfer loaf onto parchment paper. With a sharp serrated knife, cut an 'X' into the top of the loaf.
Bake for 20 minutes. Remove and cover with foil. Bake an additional 7-10 minutes or until golden brown.
Brush loaf with melted butter and sprinkle with sea salt (optional).
Allow to cool for 15-20 minutes.
Best eaten fresh and dipped into stews or soups.
