Beefy Ramen

This is not your college ramen. Think a much more sophisticated, grown-up version ... with a touch of fancy. Its very versatile & quick... add different veggies or even different meat for a twist. I chose a beef & broccoli ramen option. You won't be disappointed!




 

Your List of Ingredients

  • 2 lbs ground beef

  • sesame oil

  • 1 onion

  • 1 large carrot

  • 4 cloves garlic

  • 1/2 cup cilantro, chopped

  • 3/4 cup soy sauce

  • 2T rice vinegar

  • 3T honey

  • 2T chil paste

  • 3 packages ramen, noodles only

  • 2 cups broccoli, cooked & chopped

  • 3/4 cups pasta water

  • 3T butter

  • peanuts & limes for garnish

Step 1: Let’s Get Started


This recipe does sound like there's lots of thing, but it's really very simple. And can be done in about 30 minutes or less. Adding all the sauces to one large measuring cup makes for minimal dishes. Which is always a win over here.


When browning the beef with the sauce, I cook it a little longer get it crisp and crunchy. Add some nice texture to the soft noodles.


Step 2: Give it a ramen college try... trust me its much better!

  1. Sauté onions and carrots in sesame oil until translucent. Add garlic and beef. Cook through until beef is no longer pink.

  2. Combine soy sauce, vinegar, honey and paste. Stir together and add to beef mixture. Cook for 10 minutes on medium heat.

  3. Boil ramen until al dente. Drain and add to beef.

  4. Add pasta water and stir to combine. Mix in broccoli and butter. Add more pasta water until desired consistency.

  5. Serve with peanuts and lots of lime!
